Almond Shortbread Cookies

I like pastries and cookies, but it can be hard to enjoy them fully without worrying about the amount of carbs or sugar. I got this recipe from So Nourished (www.sonourished.com).  It uses almond flour and monk fruit sugar instead of all-purpose flour and regular sugar - so no need to worry about carbs or sugar!  The cookies are tasty and light.  Try this recipe for a tasty treat that is both guilt- and worry-free!

Ingredients:

1-1/2 cup almond flour

5 tablespoons monk fruit sugar

1/2 teaspoon baking soda

5 tablespoons softened butter

1 teaspoon almond extract

Pinch of salt

Instructions:

Preheat the oven to 350°F and line a baking sheet with parchment paper.

Whisk together the almond flour, monk fruit sugar, baking soda, and salt in a mixing bowl.

Beat in the butter and almond extract until it forms a crumbled mixture.

Gather the mixture into a ball by hand then wrap in plastic and chill for 15 minutes.

Pinch off pieces of dough and roll them into 1-inch balls.

Place the cookie balls on the baking sheet and flatten slightly with a fork.

Bake for 8 to 11 minutes until the tops just start to brown, then cool for 10 minutes on the baking sheet.

Transfer to a cooling rack to cool completely.
