Liming’s Banana Bread – Version 2
Well, I just can't control myself when it comes to experimenting with my recipes. I was curious about how certain modifications to my banana bread recipe would turn out, and I have to say that this one worked out quite well. Give this a try if you want to try something a little different!

Ingredients:

1-3/4 cup all-purpose flour
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 large eggs, room temperature
2 cup mashed bananas
1/2 cup canola oil
1/4 heavy whipping cream
1 tsp vanilla extract
1/2 cup walnuts (chopped and roasted)
2/3 cup dark chocolate chips


Directions:

1. Preheat oven to 350F. Adjust the oven rack to upper half. Note: You can roast the walnuts in the preheating oven. Line a 9" x 5" loaf pan with parchment paper, and grease with cooking spray.

2. In a large bowl, whisk together flour, sugars, baking soda, baking powder and salt. Make sure the baking soda and baking powder are evenly distributed, otherwise certain parts of the banana bread may taste bitter.

3. In another bowl, whisk together eggs, bananas, oil, heavy whipping cream, and vanilla extract until smooth. Add to the flour mixture, stirring until just combined.

4. Fold in walnuts and chocolate chips.

5. Pour the batter into the prepared loaf pan. Sprinkle with additional chocolate chips and walnuts to your liking. Bake for about 1 hour and 10 minutes to 1 hour and 15 minutes, or until a toothpick comes out clean. Cool in the pan for 10-15 minutes, then turn out onto a cooling rack to cool completely.
