Liming’s Banana Bread

I think everyone likes a slice of banana bread fresh out of the oven. And when it tastes the same 2 or 3 days after baking, that's even better. This recipe does just that. Why not try this one out, and let me know what you think?


Ingredients:

1-3/4 cup all-purpose flour
1 cup sugar
1/2 tsp salt
1 tsp baking soda
2 large eggs, room temperature
1-1/2 cup mashed bananas
1/2 cup canola oil
1/4 cup sour cream
1 tsp vanilla extract
1/2 cup walnuts (chopped, roasted)
1/2 cup dark chocolate chips (you can add more if you like)

Directions:

1. Preheat oven to 350F.  Adjust the oven rack to upper half of the oven. Line a 9"x5" loaf pan with parchment paper and grease with cooking spray.

2. In a large bowl, stir together flour, sugar, salt and baking soda. Make sure there are no baking soda lumps otherwise some bites of the banana bread could be bitter.

3. In anther bowl, whisk together eggs, bananas, oil, sour cream, and vanilla, until smooth.  Add to the flour mixture, stirring just until combined.

4. Fold in walnuts and chocolate chips.

5. Pour into the loaf pan.  Sprinkle with additional chocolate chips and walnuts. Bake for 1 hour 10 min to 1 hour 15 min (you can test if it's done by sticking a toothpick in - if it comes out clean, then the bread is cooked through).  Cool in pan for 10-15 minutes, then turn out onto a cooling rack to cool completely.
